What Makes Putharekulu Special? 

Paper-Thin Layers: The sweet resembles thin sheets of paper, made from a special rice batter cooked on an inverted pot to achieve the translucent, ultra-thin layers. 

Ghee and Jaggery or Sugar Filling: The sheets are layered with a mix of jaggery (or sugar), ghee, and sometimes cardamom for flavor, creating a delightful combination of crunchiness and sweetness. 


Labor-Intensive Process: Crafting Putharekulu requires precision and skill, making it a highly respected art form. Each layer must be paper-thin, and it takes expert hands to fold and fill them perfectly.

Ingredients Required:

  1. Rice Starch (Jaya Vari Rice):

  3. Powdered Sugar or Jaggery:

    • Finely powdered sugar or melted jaggery serves as the sweetener.
  4. Optional Additions:


Making Process :

  1. Preparing the Rice Starch:

    • Soak Jaya vari rice overnight and grind it into a fine batter.
    • Filter the batter to remove any lumps, leaving behind smooth rice starch.
  2. Creating the Thin Sheets (Paper):

    • Heat an inverted earthen pot or steel pan over a low flame.
    • Smear the surface with a thin layer of oil.
    • Dip a clean cloth into the rice starch and gently dab it onto the heated surface to form a thin, transparent layer.
    • Once dried, peel off the rice paper carefully without tearing it.
  3. Assembling the Putarekulu:

    • Place one rice paper on a clean surface.
    • Spread a thin layer of ghee evenly across the sheet.
    • Sprinkle powdered sugar or smear jaggery over the ghee layer.
    • Add crushed dry fruits if desired.
    • Fold the sheet carefully, ensuring the layers are intact.
  4. Layering for Thickness:

    • Repeat the process with multiple rice papers for a rich, layered texture.
    • Once the desired thickness is achieved, fold and roll it into the traditional Putarekulu shape.

    • Serve Putarekulu at room temperature. They are best enjoyed fresh, with their delicate layers intact.

    • Store in an airtight container to preserve freshness and prevent moisture from affecting the texture.
